Each month we will be featuring those unique and special recipes from members of the Opaa! Food Management News family that are requested over and over because they are so delicious. Ultimately, we will be featuring a collection of these recipes in our first "OPAA! Family Cookbook".

Spinach Artichoke Dip
Ingredients
- 1 -14oz. can artichoke hearts, drained
- 1 cup grated mozzarella cheese
- 1/4 cup red bell pepper
- 1 cup real mayonnaise
- 1 -10oz. box frozen spinach, thawed and squeezed dry.
- 1 clove garlic, minced
- 4 oz. Monterey Jack cheese,shredded
- 10 oz. salsa
- 8 oz sour cream tortilla chips
Instructions:
Preheat oven to 350 degrees. Coarsely chop artichoke hearts
(a food processor makes this job easier) and blend in Mozzarella
Cheese. Combine with the next four ingredients in a baking dish.
Bake 20 minutes. Top with sliced cheese and return to the oven
for an additional 2 or 3 minutes or until cheese is melted.
Serve with salsa and sour cream on the side. Chips for dipping.
