Sour Cream Streusel Muffins
Ingredients
- 4 Cups Flour
- 1 Cup Sugar
- 2 T. baking powder
- 2 eggs
- 1 Cup melted butter
- 16 ounces sour cream
- 2 teaspoons vanilla extract
Streusel Topping
- 2/3 cup granulated sugar
- ½ teaspoon cinnamon
- 1/3 cup butter or margarine
- 1/3 cup nuts
- 1/3 cup oats
Directions
Heat oven to 400 degrees. In a large bowl, sift together the flour, sugar, and baking powder. In another bowl, lightly beat the egg. Add the melted butter, sour cream and vanilla extract. Combine well. Add the sour cream mixture to the flour mixture and mix just until the ingredients are combined. Fill greased muffin tins with batter.
To make streusel topping, mix sugar and cinnamon together. Cut in the butter with a fork or pastry blender. Stir in the nuts and oats. Sprinkle the topping over the batter. Bake 15-20 minutes. Yield - 24 muffins.
