Each month we will be featuring those unique and special recipes from members of the Opaa! Food Management News family that are requested over and over because they are so delicious. Ultimately, we will be featuring a collection of these recipes in our first "OPAA! Family Cookbook".

Opaa! Orchard Salad
Ingredients
- 1 large head Romaine Lettuce
- 1/3 cup pecans - chopped
- 4 fresh apples (2 red and 2 yellow makes this a very colorful salad)
- 2 ripe tomatoes - coarsely shopped
- 1/3 cup Raisins or Craisins
- 4 Large Chicken Breasts - grilled and seasoned as desired
Sweet and Sour Apple Dressing
- 1 cup sugar
- ¼ cup oil
- 1/3 cup apple cider vinegar
- 1/3 cup apple juice
- Salt and Pepper to taste
Directions
Salad - wash remaine and drain well. In a large salad bowl add all remaining ingredients except chicken and gently toss. Drizzle dressing over salad, toss and portion on plates, top with grilled chicken strips. Garnish with croutons and a slice of yellow and red apple.
Dressing - combine all ingredients in a small sauce pan and heat just until sugar is dissolved. Pour into a container with a tight fitting lid and shake to blend seasonings. Allow to cool completely before drizzling over salads.
