Chicken Enchiladas
Ingredients
- 1/2 cups Green peppers, chopped
- 1/2 cups Onions, chopped
- 1/3 cup Flour
- 1 teaspoons Cumin
- 1/2 teaspoon Pepper
- 1 can Cream of Chicken Soup
- 8 ounces Shredded cheddar cheese
- 1 cups Sour cream
- 4 cups Diced chicken
- 1/2 cup Salsa
- Flour tortillas
Directions
Preheat oven to 350 degrees F. In a large saucepan, sauté green pepper and onion in oil for 3 minutes or until tender. Combine Cream of Chicken Soup, cheese, and sour cream.
Stir until smooth. Combine 4 cups of cheese mixture with the chicken and salsa, reserving remaining cheese mixture. Spread 1/3 cup of cheese/chicken/salsa mixture down center of each tortilla; roll up. Place seam side down in oiled baking pan. Pour remaining cheese mixture over tortillas. Bake at 350 for 20 minutes or until bubbly
