Blueberry Orange Oat Muffins
Yield: 12
Ingredients
- 1 cups flour
- 1 tsp. baking powder
- 1/2 tsp baking soda
- 1/4 tsp. salt
- 1 cups rolled oats
- 2 eggs
- 1 cups sour cream
- 1/3 cup butter or margarine
- 1 cups brown sugar
- 1/2 cup frozen blueberries
- 1/2 cup well drained mandarin oranges well drained and chopped
Glaze:
- Zest from one navel orange
- Juice from same orange
- 1/3 cup sugar
Directions
Preheat oven to 375. Line muffin tins with muffin cup liners. Combine flour, baking powder,
baking soda, salt, and the oats in a small bowl. Set aside. In a large bowl beat the eggs with sour
cream. Melt butter and brown sugar together and combine well with egg mixture. Fold berries
and oranges into the flour mixture then fold into the egg mixture. Fill muffin cups 2/3 full.
Bake 18-20 minutes or until golden brown. As soon as the muffins are taken from the oven, pierce
the tops 5 or 6 times with a toothpick and then brush the orange glaze over the tops until all the
glaze is used. Enjoy!
