Fresh Pear Romaine Salad
Ingredients
- 1-2 large heads Romaine Lettuce - washed and torn into small pieces
- 2/3 cup pecans - chopped or walnuts
- 5 fresh pears (2 red and 3 yellow makes this a very colorful salad)
- 2/3 cup Raisins or Craisins
- 1 Cup Feta Cheese
Sweet and Sour Apple Dressing
- 1 cup sugar
- ¼ cup oil
- 1/3 cup apple cider vinegar
- 1/3 cup apple juice
- Salt and Pepper to taste
Yield: 6 servings
Instructions
Salad - wash remaine and drain well. In a large salad bowl add all remaining ingredients and gently toss. Drizzle dressing over salad, toss and portion on plates. Garnish with croutons and a slice of fresh pear.
Dressing - combine all ingredients in a small sauce pan and heat just until sugar is dissolved. Pour into a container with a tight fitting lid and shake to blend seasonings. Allow to cool completely before drizzling over salads.
