Energy Packed Chocolate Oatmeal Cookie
Ingredients
- 1 cup all purpose flour
- 3 Tablespoons unsweetened cocoa
- 1 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- ½ tsp. ground cinnamon
- ½ cup butter or margarine
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 tsp vanilla
- 1 ¼ cup rolled oats
- ½ cup chocolate chips or raisins
Instructions:
Preheat oven to 350 degrees. Lightly coat a baking sheet with no stick spray. In a small bowl combine flour, cocoa, baking powder, baking soda, salt, and cinnamon. In a large bowl combine butter and sugar and beat with electric mixer until light and fluffy. Beat in egg and vanilla, stir in flour mixture and mix well with a wooden spoon. Stir in oats and chocolate chips. Drop by tablespoon onto baking sheet, leaving 2 inches between cookies. Bake for 10 minutes or until very lightly browned - cool on wire rack.
