Cajun Gumbo
Serves 6
Ingredients
- 1 Tbsp. cup oil
- 1/4 cup chopped celery
- 1/4 cup chopped onion
- 3 Tbsp chopped green pepper
- 12 oz. Fajita Chicken - finely chopped
- 4 oz turkey sausage links, sliced in ˝ inch pieces
- 4 oz. cubed ham
- 2 cups mixed vegetables
- 14 oz. can diced tomatoes
- 1 cups water
- 1 Tbsp. Beef Base
- 1 Tbsp. Chix Base
Season with:
- 1/2 tsp. Cumin
- 1/2 tsp. Black pepper
- 1/2 tsp. Garlic powder
Directions
Cook Rice
Use additional salt sparingly as the beef and chix base will be salty
In large fry pan, heat oil over medium high heat; sauté celery, onion, green pepper, diced chicken and sausage until tender
Stir in mixed vegetables and tomatoes; cook until heated through., Serve over cooked Rice.
Serve 1 cup of soup over 1/2 cup of cooked rice.
