Turkey Club Pasta With Lemon Basil Dressing
Ingredients
- 1 lb. Small Pasta Shells
- 1 lb. Bacon, Crisply Cooked and Crumbled
- 3 Cups Shredded Lettuce
- 2 Cups Shredded Swiss Cheese (8 oz.)
- 2 Large Tomatoes, Chopped
- 1 Recipe Lemon Basil Dressing - See Below
Instructions:
Prepare Lemon Basil Dressing. Cook and drain pasta as directed on package. Rinse with cold water, drain. Mix pasta, dressing, add bacon, reserving 2 tablespoons, and remaining ingredients. Cover and refeigerate 1 to 2 hours to blend flavors. Sprinkle with reserved bacon. Serve on large lettuce leaves and garnish with sprigs of parsley or fresh basil.
Dressing:
- 1 ½ cup Mayonnaise
- 4 Tbsp. Fresh chopped basil or 2 tsp. dried basil
- 2 tsp. grated lemon peel
- 2 tsp. lemon juice
Combine all ingredients and mix well. Allow to stand 15-20 minutes before dressing your salad.
Yield - 12 servings
