Opaa! Tomato Soup
Ingredients
- 2 Quarts Chopped Tomato
- 1 Cup Chopped Celery
- 1 Cup Chopped Onion
- ¼ Cup Chopped Green Peppers
- 2 Tbsp. Chicken Base
- 2 Tbsp. Margarine
- 1 tsp. crushed dried Basil leaves (do not use ground basil)
- ½ t. parsley flakes
- ½ tsp. cracked pepper
- 2 cups milk
- 2 Tbsp. Cornstarch
- Salt to taste
Directions
Sauté celery, onions, and pepper in margarine until soft. In large soup pot, add shopped tomatoes, sautéed vegetables, chicken base, and seasonings. Simmer over low heat at least 1 hour. Remove from heat, add milk and cornstarch. Return to heat and whisk until thickened. Do not boil.
Garnish each bowl with 1 Tbsp. fresh chopped tomatoes and a sprig of fresh parsley.
